The default cockpit livery will always be displayed, instead of any user made one that you select.

 

I can load my livery just fine when using the model viewer, but can't do it in-game.

 

-> The livery is selected via the game menu (options->special->F-16C->customized Cockpit).

You're using the default folder. Try using a new folder. Expected behavior with other modules is using separate folders and not overwriting the default folder.

lol I know this technically works, it just seems odd that the F-16 is the only plane (that I know of) where you can only use the default folder.

It's not how it is supposed to work. It currently will work only if you name your livery folder 'default', unlike any other module in DCS at the moment.
