In fact, for a 4.5 gen fighter, the Super Hornet has advanced radar signature reduction measures. The canted aesa radar also helps a lot, apart from surface treatment and more angular airframe joins. Looks like practice one, note the blue bands on the front and aft sections. No motor no explosives. If it was real you would see yellow band and a brown band. I think they used them so pilots get used to the weight and drag of the missiles in the aircraft. Obviously, a heavier aircraft with more drag would act differently. I do not think they need them to practice acquisition, but I am not a pilot, so I do not know for sure. Also I think it cost more money to fire the thing than to dismantle them and destroy. IF the fire them I think they would fire them to a drone and cost of fuel etc. I think is crazy how all this guys get so close to the engine intakes all the time. For Some reason I always thought the "Super Bug" was so much bigger than the "Normal Bug" (being that is 20% bigger IIRC) but it does not look that big or bigger in person.
