The issues are: One, too many classified parts on modern planes; Two, probably not the right military contracts; and Three, not everyone wants just modern fighters.

However I do have to say that I believe buying FC3 (Flaming Cliffs 3) is overall the better deal, because, if you ever decide that you want to fly any of the aircraft that you are currently not interested in, you will have it already. Also, as Eagle Dynamics gets around to updating the rest of the aircraft in it, all of the updated cockpits and Flight Models come free to FC3 owners.

there are too many issues with this idea, first of all, It is not an F-14.

so, can anyone make it so that way it uses say, the new 6DoF Su-25T cockpit? or even another cockpit?

I would love to see some heavies in DCS; however, they seem to be much more complicated and time consuming than a fighter to build, much less to actually have one player try and run a 5 man crew bomber.
