They might also upgrade the S-3 which would make a lot of sense as we're getting a mid 2000's Hornet, the S-3 was retired in 2009

I'm simply seeing the S-3 as a sort of Carrier based A-10 that can be used for AFAC and light attack in addition to Anti-Submarine and Sea surveillance.

The engraved plates wouldn't be all that hard. Likely could be done with a cheap Laser cutter or something like that.

It would be nice if we could get a later model with more digital avionics and ability to use the LITENING pod

You do have a point. However, at least a fighter variant would be nice, which from research seems to have been equipped with the Robot71 which is basically a Skyflash, this along with the integrated gun and radar would make it somewhat equivalent to a mirage in terms of weapons.
