You have to do it in VR, and its important to be seated in your normal position and not move while doing it. I've been able to set a unique default position for each aircraft that needed it. That's what hitting Num 5 does with mine. It recenters, based on the position I saved for that aircraft. I saved all of those positions for each aircraft back with 2.5.3 though, so maybe something got broken with subsequent updates that no longer saves the position properly. Hmm... just tried it again and it works until you restart the game. Then it goes back to original default position.
