Its a last ditch attempt to save a shot. The name FLOOD is just that the are inside the AIM7 circle in the HUD is flooded with PDI in an attempt to give the missile something to home on.
In a FLOOD shot the main antenna is driven out the way to allow the FLOOD antenna to flood the field of view with RF.
As mentioned above a deliberate FLOOD shot is IRL a very low PK shot ... generally considered a wasted missile
FLOOD is not a primary mode. It is a desperation AIM7 Launch mode of last resort. IRL a FLOOD launch is regarded as a super low PK ... virtually a waste of a missile.
All current FA18A-C have the revised Flight control software/firmware that incorporates Pirouette logic. Current FM in DCS to incorporate pirouette logic fully is still under development.

Many Yaks in the west have a 2 bladed Whirlwind prop fitted these have a large spinner. In addition the 3 bladed MT prop as modelled in the Sim irl comes with 2 spinner variants the small one we have in game and a larger much better looking one.

And that will also get rid of all your pneumatic air as well :)
Correct procedure is mags off battery off, open manifold drains manually pull prop through.... bit difficult in the sim as there is no ground crew command to pull prop through.
Not so sure what the issues are here. Slow speed handling (Dev version) I can still easily get controllable 50deg Stabilized AOA. On the deck at 360Kts can sustain 7.5G+ till the fuel runs out. at 15K 360Kts sustain 6.9G
As to nose wandering in hard level turns again not seeing this. within reason I can easily hold the VV on the horizon.
I am unaware of any significant recent changes to the FM In Flaps Auto
