Regarding the wing flex: The Ramex Delta video you posted doesn't show any. You see the wing "shape" change quite a bit when the elevons and slats (control surfaces) are actuated, you see vibrations of the whole aircraft when g-load is higher, but no wing flex. Note the g-load is never severe here: the aircraft fly a coordinated demo, so maneuvers are "relaxed" for the wingman to be able to follow closely; it's not a single-ship demo. Plus they fly with a load ~ reprensentative of their missions, i.e. they use the big fuel tanks.
