Have you tried lowering pre-load radius Seawolf? The 8 gigs of RAM is really more of an issue. 1.5 and 2.0 typically used 4 or 5 gigs of RAM but I see 8-11 gigs of usage with 2.1.

Follow the instructions under 'I have a serial number..."
You won't be forced to re-purchase modules if you run out of activations/deactivations.You'll would be given 1 activation any time you run out of them.
You need to log in on Homepage. Go to profile and enter key into license check box to bind to your account. Then in game go to module manager to activate.
EDIT; If you haven't already you'll need to download DCS World.
I was doing a test flight of mission when I noticed that all ground textures around a city that are supposed to be green fields had been switched to another random pattern. At the time some arty was shelling the city and I had pressed alt-ent to force fullscreen in mid-air. Not sure if that's what caused it.
A shows what it should look like and B shows what I was seeing.
Reloading mission again and it seemed fine.
EDIT; Can confirm pressing Alt-Ent causes it.
The only planes they've made any missions for are the taildraggers I imagine. I have P-51 and FW-190 and they bith have the obligatory takeoff and dogfight missions.
Did you install VC++ found in my link above?
In your first post you say it crashes when trying Normandy mission but then you said no Normandy missions appear. Do you see Normandy icon next to Nevada icon in right corner of Instant Action screen?
Try lowering pre-load radius and make sure page file is system controlled. Other things that helped me were MSAA 2X, flat shadows, updating Gpu driver with VC++ update.
If you're trying create fast mission that is not working yet. Opening ME and placing some units works for me. Start new mission to bring up coalition\map screen and select Normandy
I see great potential here. I had to lower settinngs slightly, daytime lighting needs some love, a few random crashes but for a very early release it looks great ( make that jaw-dropping at sunset).
Thanks for all the hard work ED Team!
In 1,5 and 2.0 I usually saw 4-5 gigs ram usage when bringing up FPS counter in game. With 2.1 I'm seeing 8-11 gigs. If you have only 8 gigs of RAM you will need to lower settings and I'd try lowering pre-load radius.
I had a big drop in FPS too. Decided to try driver update but only updated gpu driver and it didn't help much. Saw msalama's post about VC++ and went back and downloaded that and my FPS got back to normal levels.
