That's why I feel sorry sometimes that engine stress isn't modelled at all. Frankly speaking, an in depth simulation should be able to include that. In this case, it doesn't matter how you start it or if you abide by the official procedures because you will never face any consequences. You can't break that thing.

Interesting, so why does the engine keep running during flight when I turn the fuel pump and the master switch to off (A)? Is it because your system modeling is not interconnected enough?

When turning the engine master switch and/or the fuel pump off in mid-flight, the engine continues to function normally.

I love flying the Sabre. The cockpit is one of the best in DCS and dogfighting proves to be extremely challenging as you have a very evenly-matched opponent. Yes, it is extremely fun to hand fly. The only downside is a missing campaign. To put it in a nutshell: Go for it!
